INGREDIENTS
Nothing warms the soul like fresh banana bread and a melting polka dot of butter. Level up your loaf this winter with our island-friend the coconut, a hearty hit of hemp and golden passionfruit to finish.

- 4 overly ripe bananas
- 1 cup of coconut sugar
- 2 eggs
- 3/4 cup melted coconut oil
- 1 cup of desiccated coconut
- 1 cup gluten free self-raising flour
- 1/2 tsp bicarb soda
- 1 tbsp hemp seeds
- 1 tsp vanilla
- 2 tbsp cinnamon
METHOD
- Preheat oven to 180'C and line a loaf tin with baking paper
- Mash bananas and mix with coconut sugar, eggs, vanilla, cinnamon and melted coconut oil
- In a separate bowl combine flour, coconut, hemp seeds and bicarb soda
- Mix wet and dry ingredients together
- Transfer to loaf tin
- Cook for 45 minutes or until skewer comes out clean
Serve with a generous amount of grass-fed butter, hemp seeds, fresh passionfruit and a sprinkle of cinnamon.
