INGREDIENTS

  • 4 overly ripe bananas 
  • 1 cup of coconut sugar 
  • 2 eggs 
  • 3/4 cup melted coconut oil 
  • 1 cup of desiccated coconut 
  • 1 cup gluten free self-raising flour 
  • 1/2 tsp bicarb soda 
  • 1 tbsp hemp seeds 
  • 1 tsp vanilla 
  • 2 tbsp cinnamon 

METHOD 

  • Preheat oven to 180'C and line a loaf tin with baking paper 
  • Mash bananas and mix with coconut sugar, eggs, vanilla, cinnamon and melted coconut oil 
  • In a separate bowl combine flour, coconut, hemp seeds and bicarb soda 
  • Mix wet and dry ingredients together 
  • Transfer to loaf tin 
  • Cook for 45 minutes or until skewer comes out clean 

Serve with a generous amount of grass-fed butter, hemp seeds, fresh passionfruit and a sprinkle of cinnamon.
